When we talk about South Indian food, we usually talk about fare unique to the areas of the four southern states of India, viz. Karnataka, Kerala, Andhra Pradesh, and Tamil Nadu. In general, South Indian food is possibly the hottest of all Indian food. Meals are centered on rice or else rice-based dishes. The cuisine is incomplete without idli sambar, rasam, dosas, be it plain dosa, masala dosa etc.

Idlis are steamed cakes made from rice batter, Dosas or Uttapams are pancakes made from a batter of rice and lentil flour.

South Indian desserts, while not as rich as their northern counterparts, are nonetheless very mouth-watering. Ranging from payasams made from diverse cereals and pulses; right down to the sweet baadushas and jhaangaris, there is a real feast for all.
