Sous Vide is a French word for "under -vacuum", anything which is cooked or kept safely under the vacuum. sous vide cooking is a method for cooking food in sealed tight plastic bags kept in water bath for a very long time could be up to 72 hours, which is not unusual it is practiced, because the temperature kept in the water bath is 60 °C or 140 °F less than the usual cooking temperature. This entire methodology is to cook the food evenly from inside-out and not to overcook it and keep the juices of the food intact in the end.

In 1799 this method of cooking was discovered by Sir Benjamin Thompson later in 1960 French and American engineers reintroduced this method for industrial food preservation. Due to low cooking in low temperature the cell walls in the food, do not burst out. Especially when vegetables are cooked in low temperature its freshness and naturalness remains intact also maintains a firm or somewhat crisp texture of the veggie.

Culinary enthusiasts around the world have been using them for years to cook proteins at low temperatures under a vacuum seal technique with no risk of overcooking or drying them out. Sous vide machine is a “water oven,” it’s essentially an immersion circulator about the size of a breadbox, and consists of a 2.6-gallon tub, a heating element and a precision temperature-control device. It’s got a stainless steel exterior that gives it, a chick look and easy to clean.

Sous vide bags are bags used for low temperature cooking done under a water bath, where food is locked under a moisture-free reusable plastic bags. Food Saver and Ziploc are the common ones used for cooking. They are made from polyethylene. These bags are of practical importance, they allow cooked food to be stored, sealed and refrigerated, for a considerable time, and they are very popular for the catering industry.

Leftover food can also, be sealed and kept in these, to keep the aroma and taste intact, as the moisture and oxygen cannot penetrate through it and always keep a gap of at least 3 inches, from the main food product, in order, to keep the sealing of the food stable.
